Brandy Butter
There’s no harm in making the brandy butter now and storing it at the back of the fridge. It is one less thing to think about for the big day. Do use good butter as it makes all the difference.

Serves 8 Ingredients
125g of unsalted butter, softened.
125g of caster sugar.
Grated rind of one orange.
Two tabelspoons of brandy.


Method
Cream the butter, caster sugar and orange rind until pale in colour. Gradually beat in the brandy being careful not to splash it out of the bowl.
Put into a serving dish, cover well with cling film and keep in the fridge until ready to use. Take out one hour before using to soften slightly.
