Pizza with peaches and yoghurt

Pizza with peaches and yoghurt
This is being made down the road at the farm shop and is a great pudding and fun for children to make.

Ingredients
Serves 6
250-350 ml lukewarm water
1 tbsp active dried yeast
550g strong white flour
1 tsp salt
1 tsp runny honey
1 tbsp virgin olive oil
1 medium tub crème fraiche
4 ripe peaches
2 tbsp vanilla sugar.

Method
Pour 150 ml of the water into a bowl and sprinkle over the yeast. Stir to dissolve and then leave in a warm place for 10 minutes.
Put the flour and salt into a large bowl. Add the honey and olive oil to the yeast mixture and stir well. Pour into the flour mixture and stir to make a soft and sticky dough. Add enough of the remaining water a little at a time until you have a springy dough mix.
Put the dough onto a lightly floured surface and knead for 10 minutes or until it is smooth and elastic. Lightly oil a large bowl and place the dough in the bowl.
Cover with cling-film and leave in a warm place for two hours.
When the dough has doubled in size, remove the cling-film and knead again until smooth.
Divide into six round balls and let the dough rest for 30 minutes.
Pull and roll the dough out into six rounds and place on flat oiled baking sheets.
Preheat the oven to maximum temperature. Spread over the crème fraiche and then cut the peaches into slices removing stones and arrange.
Sprinkle with the vanilla sugar and bake in the oven for about 15 minutes or until the dough is crispy round the edges.
Serve hot.
