Wasabi
Clare Latimer's recipe for
Wasabi

Wasabi:
Add one large teaspoon while mashing and check for fla vour. Add more to taste.
Sweet potato: Use sweet potatoes instead of ordinary potatoes and cook and mash in same way.

Bring a large pan of salted water to the boil, add the potatoes and bring back to the boil.
Reduce heat, cover and simmer for about 15 minutes or until the potatoes are soft. Test with a knife.
Drain well and then put back in the pan or into a blender. Add the butter and mash well.
Add some milk and mash again. Add enough milk to make a firm but smooth mixture.
